Guatemala – Eby Samayoa
Summary
A natural processed coffee from Finca Nueva Montaña, located in the forested area of Casillas, Santa Rosa, Guatemala. Produced by Eby Arcely Samayoa and her husband Antonio Medina, who transformed former pastureland into a coffee farm over 30 years. The coffee is processed using a controlled natural method: fully ripe cherries are placed in nylon bags for 48-58 hours to reduce oxygen and allow fermentation, then dried on raised beds for 16-20 days. Flavour notes include orange zest, muscovado sugar and grape.
