Sookoo is a single-origin filter coffee from the Guji region of Ethiopia, produced by Ture Waji and Sookoo Coffee. Grown at 2000–2200m elevation on organically managed farms under a light forest canopy. Varieties include Gibirinna 74110 and Serto 74112, processed using the anaerobic natural method with 21–25 days of drying on raised beds. The cup profile features notes of gummy candy, rose hip, and lime sorbet, with red berry and citrus flavours, lively acidity, and a velvety body. Scored 89.
