Summary
A rare Sidra variety coffee from Nestor Lasso's family-run farm El Diviso in Acevedo, Huila, Colombia, grown at 1,750m on volcanic soils. This coffee underwent an extended 90-hour natural processing with multiple controlled fermentation stages including aerobic oxidation, anaerobic fermentation in tanks and sacks, and a submerged tank stage with recycled cherry juices. It delivers intense fruity flavours with notes of apricot, dandelion candies, rose tea, candied ginger, and nougat, with a boozy sweetness and tropical acidity, rich mouthfeel, and a fermented cocoa finish. This lot was used by World Barista Champion Anthony Douglas in 2022. Score: 89.
