Intuition Coffee

Intuition Coffee is a Peoria, Illinois roaster-café run by Ty Paluska, a Peoria native who co-founded the city's Thirty-Thirty Coffee, spent years roasting out west, then came home on a hunch that his hometown had room for more seriously good coffee. He roasts on a 15-kilo Mill City machine you can watch through glass in the café, which sits in the historic flatiron Kickapoo Building. Alongside the coffee, Kami Paluska runs a cold-press juice program and a menu of grain bowls, toasts and overnight oats. Their line, basically: great coffee matters, but genuine hospitality comes first. A warm, community-minded pick for specialty coffee in central Illinois.
