Summary
Guatemala Pampojilá is a specialty coffee from the Pampojilá farm owned by Alex Herrera, located high above Lake Atitlán on volcanic slopes in Guatemala. The Caturra variety is grown at 1480-1800 meters above sea level in volcanic soil with frequent fog that slows cherry ripening. Processed using the Natural/Anaerobic method with a 'sleeping bag' drying technique for controlled fermentation. Flavour notes of cherry and chocolate with a juicy, slightly wine-like structure. Roasted for espresso but also suitable for Aeropress, V60, or Chemex brewing.
