Feels Good is an organic espresso blend from ST. ALi, composed of 60% Peru and 40% India. The Peruvian component is a Grade 1 Organic selection known for clean sweetness and bright acidity, while the Indian component from Chikmagalur adds softness and balance. Washed processed, this light roast offers notes of red apple, maple syrup, stone fruit, caramel, and black tea. It is versatile, suitable for espresso, pour-over, and filter brewing, and pairs well with full cream dairy.

Grind: Fine
Try pulling toward the longer end of the yield, 52g, for maximum clarity and brightness. If it tastes hollow or sour, tighten the grind and slow the extraction down. If it's flat and bitter, open up and speed it up slightly.

- 1.Pre-wet your filter paper and discard the rinse water.
- 2.Bloom the coffee with twice its weight in water (about 30ml per 15g of coffee) for 30-45 seconds. (30 s)
- 3.Pour in slow, steady circles, keeping the water just covering the grounds.
Lower water temperature than you might use for darker blends, this protects the delicate fruit notes from over-extraction. Total brew time: 3-4 minutes.

Pre-wet the filter paper. Make a full pot, let it sit on the hotplate for no more than 20 minutes and drink it fresh.
