Summary
This washed coffee from Habtamu Fikadu Aga is sourced from approximately 117 smallholders across the Chelbesa highlands in Sidama, Ethiopia. Grown at 2000 MASL, it features Ethiopian heirloom varieties 74110 and 74112. The cup offers juicy stone fruits like plum and peach, delicate floral notes of jasmine and lavender, and a long sweet finish with a light body and sparkling citric acidity. The coffee underwent a submerged fermentation of 48-72 hours followed by a second 12-hour submerged fermentation, then dried on raised beds for 10-12 days.
