El Rubí Sidamo is a washed coffee from Colombia, grown at 1900 MASL in the San Adolfo, Huila region. Produced by Wilder Lazo, Segundo Lazo, and Heiner Lasso at Finca El Rubí. The variety is Sidamo Heirloom, originally germinated from a green coffee sample. The washed process involves 30 hours of anaerobic fermentation in blue tanks without water, followed by full washing and 14 days of drying in marquesinas. The cup profile features bergamot, key lime, citric acidity, and aromatic florals.
