Trust The Process is a single-origin coffee from Finca Carrizal in Alajuela, Central Valley, Costa Rica, produced by Francisca and Oscar Chacón of Las Lajas mill. Grown at 1400-1600 masl, this SL28 variety is processed using the Black Diamond Natural method - a slow sun-drying on raised beds over several weeks to cold crystallize the sugars. Light roasted. The cup is bright and fruity with notes of grapefruit, tart strawberry, and Sauvignon Blanc. Coffee Review describes it as richly sweet, elegantly tart, and complex with pink grapefruit, cocoa nib, strawberry guava, lemongrass, and palo santo.
