Summary
This coffee comes from Marly Palomino's farm in Inkawasi, Cusco, Peru. The farm features volcanic and rocky soils, with guava, citrus, and erythrina trees. After selective harvesting, the cherries undergo a 48-hour anaerobic fermentation, then are pulped and fermented again for 48 hours, washed, and dried on African beds for 14 days. The cup is complex and elegant, with delicate floral notes, yellow stone fruit, and citrus, high sweetness, medium body, and medium-high acidity. Variety: Geisha.
