Summary
A rare Coffea Liberica from Quảng Trị Province, Vietnam, processed using anaerobic natural fermentation. The coffee undergoes 120 hours of anaerobic fermentation in airtight bags, followed by 3 days of drying on raised beds, then 2 weeks in a dark room for interrupted drying before finishing to 12% moisture content. Produced in collaboration with 96b café and roastery in Ho Chi Minh City and the farming cooperative Htx nông nghiệp sinh thái bốn phương, sourced through Karmic Circle Coffee Trading. Flavor profile includes berries, jackfruit, cherimoya, toasted nuts, and a stevia-like sweetness with full body and bright citrusy acidity. Light-medium roast. Suitable for pour-over, French press, and cold brew.
