Summary
This coffee comes from the Wiang Pa Pao district in Chiang Rai, Thailand, and is a project led by Jane Kittiratanapaiboon of Beanspire. It is a fully washed coffee that undergoes 12-24 hours wet fermentation, followed by a 12-hour soak in fresh water to remove mucilage, then dried on bamboo raised beds and greenhouses for 15-20 days. The green coffee is prepared through destoning, hulling, size grading, density table sorting, and hand sorting. Roasted dark, it offers tasting notes of dark chocolate, spice, and black cherry, with a full body and balanced profile featuring soft fruit tones.
