Summary
A single-origin coffee from Mama Cata Estate in Boquete, Panama, owned by the Garrido family. The H1 Centroamericano variety is an F1 hybrid cross of Rume Sudan and Sarchimor T.5296. Processed using ASD (Anaerobic Slow Dry Natural): cherries are fermented in airtight containers for several days then dried slowly on raised screens for over a month. Roasted medium-light. Tasting notes include flowers, starfruit, lemon candy, honey, apple cider, and cacao with a heavy body and delicate aftertaste.
