Iris Estate Terroir
Summary
A washed Geisha coffee from Iris Estate in Volcán, Panama. Produced by Jamison Savage, Sasa Sestic and Elvin Siew. Grown at 1850-2300 masl on one of the highest coffee farms in Latin America. The coffee presents delicate jasmine aromatics, apricot sweetness, and bright orange acidity with a clean, refined finish. Intended for espresso roast profile. Cherries are mechanically de-pulped, washed, and slowly dried on multi-tier raised African beds, then rested in parchment for up to 90 days to stabilise and develop complexity.
