El Salvador Carlos Pola
Summary
El Salvador Carlos Pola is a balanced coffee with good sweetness and a pleasant, soft body. Flavour notes include nougat, honey, and a hint of red apples. The coffee is produced by Carlos Pola on Finca Las Brisas and Finca San Antonio in the Chalchuapa region of Santa Ana, El Salvador. The beans are selectively hand-picked, dried on raised beds in the shade for three days, then depulped and dried further on raised beds for 15-20 days. Processing methods include honey, natural, and controlled fermentation, with water usage minimized and recycled. The farm uses sustainable practices, including nitrogen-fixing shade trees and beneficial fungi to enhance nutrient uptake.
