Summary
A single-origin organic coffee from the Jaltenango community in Chiapas, Mexico, grown at 1,200-1,500 meters. The farmers joined forces in 2011 to invest in renewing and marketing their Strictly High Grown organic coffees. The farm is named after the nearby flamingo nature reserve. This washed Arabica, with varieties Sarchimore, Caturra, Bourbon, Geisha, and Oro Azteca, brews a harmonious and fresh cup with nutty-caramel flavors and notes of juicy red apple.

Rinse the filter paper with hot water before brewing to avoid paper taste. For a stronger cup or with milk, use a bit more coffee. A permanent filter is more sustainable.
