
Colombia Popayan Reserve Washed
Summary
Colombia Popayan Reserve Washed is a washed-processed 100% Castillo Arabica specialty coffee from Cauca, Colombia, grown at 1,700 m by 50 small family farms coordinated by Cofinet. The farms use an agroforestry approach and receive a 20% premium for top quality. Flavour profile features strong caramel with milk chocolate, nuts and candied orange, complemented by dried orange, almonds and chocolate. Recommended for daily espresso.

If extraction is too fast, grind finer; if too slow, grind coarser. Change only one variable at a time.
Moka pot
Grind: slightly coarser than espresso
- 1.Pour preheated water into the bottom chamber just below the valve.
- 2.Fill the basket to the top with freshly ground coffee, do not tamp.
- 3.Assemble the moka pot and heat it.
- 4.When you hear a gentle gurgling, the coffee is ready.
- 5.Cool the bottom part of the moka pot to stop extraction.
Keep the moka pot clean; if coffee splutters, the heat was too high.
