Summary
This microlot from Leonid Ramirez's 4-hectare farm Cortina de Hierro in Genova, Quindío, Colombia, grown at 1900–1950 MASL, is 100% Castillo variety. Cherries undergo 30 hours of underwater fermentation after floating and sorting, then the parchment is washed and dried under controlled conditions. The cup is balanced and sweet with notes of stewed apricot, tangerine, and toffee.
