Cutervo (espresso)
Summary
A regional blend from small-scale farmers in the Cajamarca Department of Peru, encompassing San Ignacio, Jaén, and Cutervo. Grown at approximately 2750 masl, this washed coffee features a mix of Bourbon, Caturra, Catuai, and Pache varieties. The cup is balanced and smooth with refined citrus brightness and a dessert-like foundation of caramel, milk chocolate, and brown sugar. The lot undergoes extended fermentation (30-40 hours) and slow temperature-controlled drying over 16-20 days, followed by strict sorting for density and flavor.
