Columbia Banana Glaze
Summary
Columbia Banana Glaze is a single-origin coffee from Colombia, processed at El Vergel Estate in Tolima by producers Elias and Shady Bayter. Made from Pink Bourbon variety grown at 1750m altitude. The coffee undergoes a honey process with banana co-fermentation: 48-hour pre-fermentation, depulping, then co-fermentation with yeast and banana-derived compounds for approximately five days, followed by patio pre-drying and mechanical drying, finished with a 30-day stabilization period. The cup profile features notes of banana, caramel, hazelnut waffles, and vanilla with a creamy, dessert-like texture. Scored 88.50.
