
Colombia Yellow Bourbon Galaxy Hops
Summary
Single-origin coffee from producer Edwin Noreña's Campo Hermoso farm in Circasia, Quindio, Colombia, grown at 1800 m. The Yellow Bourbon variety was processed using honey processing with hops co-fermentation: cherries underwent a low-oxygen phase, 72 hours of carbonic maceration, and the collected mossto was combined with hops before a further 72-hour black honey fermentation, then slowly sun-dried in a controlled greenhouse. The cup is bright and intensely floral with notes of citronella, jasmine, mandarin orange and rose tea, where the hops add depth and an elegant botanical dimension. Scored 89. Roasted as an omni roast.
