Vanilla Toffee
Summary
Vanilla Toffee is a Natural Experimental processed coffee from Colombia, grown by producer John Wilmer Cuellar in Acevedo, Huila at 1550-1800 meters above sea level. The variety is Wush Wush, an Ethiopian landrace known for delicate florals and syrupy sweetness. The lot undergoes a layered fermentation protocol: 20 hours of oxidation in open-air tanks followed by 50 hours of barrel fermentation, then dried on raised beds for 18 days. Flavor notes include vanilla cream, sweet almond, and orange blossom, with a velvety, dessert-like sweetness and soft, creamy acidity.
