Produced by Diego Horta, a second-generation coffee grower, this lot is processed using a Honey process with anaerobic fermentation: cherries undergo 30 hours of anaerobic fermentation, then are depulped and dried in a mechanical silo for about 50 hours. The cup offers a sweet, honey-like aroma, flavors of caramel, red apple, and mandarin orange, with a silky body and clean, nutty finish. The Colombia variety is a hybrid of Caturra and Timor Hybrid, known for quality and resilience. This coffee is equally enjoyable as filter or softer espresso.
