Juan Evangelista - Parainema Washed
Summary
Parainema Washed coffee from producer Juan Evangelista Fernández Pineda, grown in Las Flores, Santa Barbara, Honduras at 1500 masl. The Parainema variety undergoes a washed process: hand-picked cherries are floated, de-pulped, dry fermented for 15 hours in concrete tanks, rinsed three times, and dried in parabolic solar dryers for about 13 days. Flavour profile includes vibrant acidity reminiscent of candied orange and limeade, stone fruit notes like plum, and a prevailing sweetness of toasted marshmallow.
