Apollon's Gold is a Tokyo roaster that's been quietly building a following since 2017. Their beans come in two flavours of philosophy: an Omni Roast built to work however you brew it, and a Classic Espresso profile for the ristretto crowd. You'll find them in two spots around the city — the Kitanomaru Espresso Bar and the Akasaka Cafe Roastery — so there's somewhere to actually sit and drink the stuff.
