Space Disco Sidra is a special filter coffee from Finca Anaya, a small family farm in Acevedo, Huila, Colombia, owned by Sergio Darío Aranda Gómez. This lot won the roaster's community cupping. The Sidra variety, originally from Ecuador and related to Bourbon and Typica, is processed using a meticulous natural method: fully ripe cherries undergo 36 hours of oxidation, followed by 36 hours of fermentation under water until reaching a pH of 3.8, then slow pre-drying and controlled mechanical drying. The cup offers a juicy, tropical profile with peach syrup and yellow fruits in aroma, pineapple and ripe mango on the palate, bright citrus acidity, juicy body, and a long caramel-like finish with peach notes. Scored 88 SCA points.
