It is a Red Bourbon variety processed using Carbonic Maceration Mossto Honey method, an experimental anaerobic fermentation process involving mossto (coffee cherry juice), CO2, red fruits, and wine yeast, followed by slow sun drying on raised beds. Roasted light, it delivers a complex and intense cup with tasting notes of hibiscus mead, guava kombucha, and eucalyptus honey.
