
Ethiopia Dembi
Summary
Dembi is located in the Sidama region of Ethiopia. Approximately 1200 farmers contribute to these lots. Coffee cherries are hand-picked at peak ripeness and processed using the natural method. Cherries undergo floatation to remove defects, then are dried in shade for about 18 days until reaching 11.2% moisture content. The dried cherries are rested for 4 weeks before hulling and preparation for export. The coffee is of the Heirloom Ethiopian variety, grown at 1950-2500 MASL altitude.
