
El Chaferote Pink Bourbon Washed
Summary
El Chaferote is a washed Pink Bourbon coffee from Finca El Chaferote in San Agustín, Huila, Colombia, produced by Erick Bravo. The farm sits at 1,700–1,800 masl. Pink Bourbon is a low-yielding variety originally thought to be a Bourbon hybrid but now understood as an Ethiopian landrace. The washed process involves a 36-hour in-cherry fermentation, depulping, another 36-hour fermentation, and full washing, followed by 15–20 days of drying. The cup is soft yet lively, with aromas of peach cobbler, almond, and cherry, flavors of persimmon, candied almond and plum, mellow nougat sweetness, redcurrant acidity, and a finish of chocolate wafer and grapefruit zest.
