Summary
This single-origin Colombian coffee comes from Finca Campo Hermoso in Quindio, produced by Edwin Noreña. The Yellow Bourbon variety is grown at 1550 meters above sea level. It undergoes an experimental IPA anaerobic processing method: a 120-hour anaerobic fermentation in cherry, depulping, followed by a second 96-hour anaerobic fermentation with hops and malts, then slow drying on raised beds for 20-25 days. The cup offers bright grapefruit acidity, rosemary, jasmine, honeysuckle, orange blossom, and rosewater, with a hoppy finish and lingering grapefruit cordial.
