Ethiopia Idido Anaerobic Natural
Summary
Ethiopia Idido Anaerobic Natural is a coffee from the Yirgacheffe region of Ethiopia, specifically from the Idido village (kebele). The cherries are grown at altitudes of 1850-2200m and processed using an anaerobic natural method: ripe cherries are fermented in sealed bags for 90 hours, then dried in the shade on raised screens. This coffee offers flavour notes of lavender, lemon zest, jasmine, ginger, green tea, berries, and citrus, with a heavy, syrupy mouthfeel. It is suitable for pour-over and cold brew.
