This coffee comes from Finca El Paraíso-92 in Colombia, produced by Wilton Benitez. It is made from the rare Papayo variety, an Ethiopian landrace. The coffee undergoes a unique double fermentation process: cherries are sterilized and fermented in a bio-reactor inoculated with Japanese Kōji (Aspergillus oryzae), then after pulping a second fermentation phase takes place. Beans are sealed through hot and cold water impacts and dried for 46 hours at 38°C. Light roast with tasting notes of peach, oregano, orange, passionfruit, and Hojicha with a creamy mouthfeel reminiscent of milk tea.
