Summary

A single-origin coffee from Finca El Paraíso-92 in Colombia, featuring the Java variety. The farm dedicates 2 hectares specifically to this Ethiopian-derived variety. The coffee undergoes a unique multi-stage processing: cherries are sterilized, fermented in a bio-reactor inoculated with Saccharomyces cerevisiae var. diastaticus (yeast used in Saison beer production), pulped, given a second fermentation, then sealed with hot and cold water impacts and machine dried for 46 hours at 38°C. Flavor profile includes orange creamsicle, milk chocolate, and floral notes with a creamy mouthfeel and lingering candied orange finish. Light roast.
