Milan, not from Italy is a special filter coffee from Finca Milan in the Risaralda region of Colombia. The farm, run by the Madrid family since 1982, uses an experimental culturing fermentation process with a starter culture of local yeasts and bacteria combined with fruit-based substrate, spices, and herbs, fermenting for five to ten days. After fermentation, the coffee is washed and slowly dried for fourteen to sixteen days. The coffee features varieties Castillo and Caturra, and offers a floral aroma, clear sweetness, silky stone fruit, and a hint of quince in the finish. It is light, clean, and complex, with a cupping score of 86.
