Summary
A washed microlot from Merly Leon's farm La Palta in Queromarca, Peru. The farm sits at 2050-2250 meters above sea level. The coffee undergoes an extended anaerobic fermentation as part of the washed process: after harvest, ripe cherries are sorted by flotation, fermented anaerobically for 48 hours, depulped, fermented for another 42 hours, then washed and dried on raised African beds for 17-18 days. The result is an elegant and pleasant coffee with great clarity and balance, featuring notes of peach and honey.
