Papua Ny Guinea Okapa
Summary
This coffee comes from around 1,500 smallholder farmers collaborating with the Outspan 4 Mile wet mill in Goroka, Eastern Highlands, Papua New Guinea. The producers primarily grow Typica and Mundo Novo varieties at altitudes up to 1,500 meters. The coffee is fully washed: ripe cherries are depulped, sorted in water, fermented in open tanks for about 12 hours, then washed two to three times. The parchment is dried on cement for about seven days and finished in mechanical dryers. It offers a clean, lightly floral cup with a soft body, featuring notes of berries, vanilla, and elderflower.
