Summary
A washed specialty coffee from the Finca la Sierra micro-farm in Chimaltenango, Guatemala, produced by Hugo López Jiménez at 1,755 meters above sea level. This 100% Caturra lot offers a clean and sweet cup with dense Brazil nuts, honey, and a fresh orange finish, making it ideal for modern espresso and milk-based drinks.

If the espresso extracts too quickly, grind finer; if too slowly, grind coarser. Adjust only one variable at a time.
Moka pot
Grind: slightly coarser than espresso
- 1.Preheat the water in a kettle to avoid a lengthy boiling process during coffee preparation.
- 2.Pour the heated water into the bottom chamber of the moka pot, just below the valve.
- 3.Fill the basket to the top with freshly ground coffee, do not tamp.
- 4.Assemble all parts of the moka pot and place it on the heat.
- 5.When you hear a gentle gurgling, the coffee is ready.
- 6.Cool the bottom chamber to stop the extraction process.
Keep the moka pot clean; if it is clogged, the coffee can become bitter. If the coffee sputters too quickly, reduce the heat.
