Guatemala Esperanza Del Bosque Washed
Summary
Guatemalan specialty coffee from the Esperanza del Bosque family farm in the Huehuetenango region, cultivated by the Rodriguez family at 1,550–1,700 meters above sea level. The washed SHG process yields a clean, balanced cup with notes of granola, chocolate and dried figs, medium body and a gently sweet finish. Grown in the shade of native trees, with Caturra, Catuai and Conebosque varieties.

- 1.Weigh freshly ground coffee (e.g., 14g).
- 2.Pour coffee into a dry, clean portafilter, distribute evenly and tamp.
- 3.Before and after extraction, flush hot water through the group head, lock in the portafilter and start extraction.
- 4.Let the extraction into the cup on the scale; with 14g of coffee and a 1:2.5 brew ratio, the result should be 35g in 20-25 seconds.
Moka pot
Grind: slightly coarser than espresso
- 1.Pour the heated water into the bottom part of the moka pot just below the valve.
- 2.Fill the filter basket fully with freshly ground coffee, do not tamp.
- 3.Assemble all parts of the moka pot and place it to heat.
- 4.When you hear a gentle gurgling, the coffee is ready.
- 5.Cool the bottom part of the moka pot to stop extraction.
