Summary
A Colombian coffee from the Quindio region, grown by Eliana Bravo at La Esmeralda farm and processed by Sigilo using an anaerobic natural method. The cherries undergo 98 hours of controlled fermentation with temperature and PH regulation, with the mosto removed every 12 hours, cooled and reintroduced. The coffee is then dried on raised beds for 15 days. Typica variety. Flavour notes include tropical fruit, black cherry and dark chocolate.
