Summary
A rare Excelsa species coffee from Vietnam's Quang Tri region, produced by 96B. Undergoes a 120-hour anaerobic fermentation and 30-day slow-drying process. Offers complex, jammy fruit notes of papaya, mango, raisin, and blueberry jam, with a heavy body, mild lychee-like acidity, and a lingering stevia-like sweetness.

- 0:00Bloom: pour spiral pattern (three laps out then three laps in) until 50 g on scale, finish in 10 seconds. (10 s)
- 0:40First pour: pour spiral pattern (five laps out then five laps in) until 150 g on scale, finish in 10 seconds. (10 s)
- 1:10Second pour: repeat same pour pattern until 250 g on scale, finish in 10 seconds. (10 s)
- 1:40Final pour: repeat same pour pattern until 350 g on scale, finish in 10 seconds. (10 s)
- 5.Wait for all water to pass through dripper. Total brew time 2:30 to 3:30 minutes.
Heat at least 350 g water to 205°F (96°C).
