This coffee is grown by Jim Chestnut on a small farm near Volcano Village in the Puna district of Hawaii's Big Island, at approximately 914 meters above sea level on Kilauea volcano. The farm grows Typica and Caturra varieties. Processed using a 'Champagne Natural' method where whole cherries are fermented with selected wine yeast strains and dried in the fruit. Awarded 95 points by Coffee Review, with tasting notes of guava, cherry blossom, cocoa nib, nougat, and sandalwood, featuring sparkling phosphoric acidity and a syrupy-smooth mouthfeel.
