Summary

This washed coffee from Ethiopia's Sidama region is produced by Niguse Gemeda at the Chire Washing Station. It is made from varieties 74112 and Heirloom and processed using the washed method (a rarity in Ethiopia). Only fully ripe cherries are carefully selected, depulped, and fermented for 24-72 hours to remove mucilage. The cup offers delicate notes of elderflower, lemon, and grapefruit with a syrupy sweetness and smooth honey-like finish.
