Blue Bottle is the roaster that helped define third-wave coffee. It started in 2002 when James Freeman, a former clarinettist, roasted tiny batches in an Oakland potting shed and sold them at the farmers market with one rule: only coffee within 48 hours of roasting. That freshness obsession scaled into a global name — cafés across the US, Japan, Korea and beyond — and a majority stake sold to Nestlé in 2017. Expect clean, approachable single origins and signature blends. It's a big, polished operation now rather than a scrappy micro-roaster, but if you want a dependable, historically important specialty coffee, Blue Bottle is it.
